Pastirma or basturma, also called pastarma, pastourma, basdirma, or basterma, is a highly seasoned, air-dried cured beef that is found in the cuisines of Turkey, Armenia, Lebanon, the Levant, Azerbaijan, Bulgaria, Egypt, and Greece, Iraq and North Macedonia.
